We let the seasons guide our kitchen. Every dish begins with what is freshest -- sourced from local farms, foraged from nearby forests, and prepared with techniques rooted in tradition but open to invention. Our menu changes weekly because the best ingredients will not wait. At Ember & Thyme, we believe that restraint is a form of respect: for the ingredient, the craft, and the guest. Born in Lyon, trained in Zurich, and shaped by kitchens across Europe, Chef Hartmann brings two decades of culinary mastery to Ember & Thyme. His philosophy is deceptively simple: honour the ingredient, respect the season, and never overcomplicate the plate. After earning his stripes at three-star establishments in Paris and Copenhagen, he returned to Switzerland to build something deeply personal.

Hand-dived langoustines from the North Sea, gently roasted and served atop a Carnaroli risotto finished with aged Parmigiano and shaved Périgord truffle. Accompanied by a delicate shellfish bisque foam and micro herbs from our rooftop garden.
